Ingredients
2 cups Whole Wheat flour |
1 tsp Baking soda |
0.25 tsp Salt |
0.5 cup Brown sugar |
0.5 cup Olive Oil |
2 count Large eggs, beaten |
2.33 cups Mashed overripe bananas |
Directions
- Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.
- In a large bowl, combine the flour, baking soda, and salt.
- In a separate large bowl, beat the brown sugar and olive oil with an electric mixer until smooth and creamy.
- Add the beaten eggs and mashed bananas to the olive oil mixture, stirring until well blended.
- Gradually stir the banana mixture into the flour mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
NOTES
- The original recipe called for more sugar - 3/4 cup, but I've reduced it since I've found it doesn't need it
