Meatloaf
1  tbsp Extra Virgin Olive Oil
3  qty Celery Stalks, finely chopped
3  large Shallots
2  qty Scallions, sliced
1  Large Carrot
2  Large Eggs
1  cup Whole wheat breadcrumbs
0.75  cups Plain Non-fat Greek Yogurt
2  tbsp Ketchup
1  tbsp Hot sauce
0.5  tsp Ground Pepper
0.25  tsp Cayenne Pepper
2  lbs Ground chicken or ground turkey
Glaze
1  tbsp Honey
2  tbsp Ketchup
1  tbsp Hot Sauce

Directions

  1. Preheat oven to 375
  2. Heat a medium sized pan and heat the olive oil. Take your celery, shallots, scallions, and carrot and cook until softened.
  3. In a large bowl, mix eggs, breadcrumbs, greek yogurt, ketchup, hot sauce, black pepper, cayenne pepper, ground meat, and cooked vegetables. Mix.
  4. Form into mini loaves. Maybe around 4x4x4 inches.
  5. Oil baking sheet and put loaves on it. Cook in oven for 20-25 minutes. Really until temp reaches 165 internally.
  6. Mix the glaze incredients.
  7. In the last few minutes of cooking, put the glaze on top so it cooks a bit.

The great thing about meatloaf is you don't have to be super strict about the ingredients. Add and remove ingredients as you have them. Heck, if some food is about to go bad, put it in the meatloaf to give it new life. It'll stay good for a few more days and you won't have wasted it. Just make sure that your meatloaf is adequetely moist.
