Ingredients

16  oz Whole Wheat Penne Pasta
0.375  cup Red Wine Vinegar
1.5  tbsp Lemon Juice
6  count Garlic Cloves, crushed
6  teaspoons Dried Oregano
1  cup Extra Virgin Olive Oil
1  pint Cherry or Grape Tomatoes, halved
1  count Medium Red Onion, cut in half and then sliced lengthwise
1  count Green Bell Pepper, chopped
1  count Red Bell Pepper, chopped
1  count Medium Cucumber, chopped
1.5  cup Greek Sliced Olives or Olive Salad
7  oz Feta Cheese, crumbled
1  to taste Salt
1  to taste Pepper

Directions

  1. Get a very large bowl or pot.
  2. Cook pasta to al dente instructions, drain and rinse with cold water until the pasta is no longer hot
  3. Mix all the ingredients in the very large bowl

I modified the recipe a bit from the original. The original uses ridiculous proportions. This does a really good job of immitating the BJ's mediterannean salad.

It's still a work in progress, need to hone in how much red wine vinegar I should use with less olive oil.
