Ingredients

Main
1  pound dried lima beans
2  count bay leaves
3  tablespoons extra virgin olive oil
1  count medium onion, chopped
4  count garlic cloves, thinly sliced
0.25  cup fresh parsley, chopped
2  tablespoons lemon juice
1  tablespoon fresh oregano, chopped
2  teaspoons grated lemon zest
0.5  teaspoon salt
0.25  teaspoon pepper
Garnish
1  to taste additional fresh parsley, chopped

Directions

  1. Rinse and sort the lima beans. Soak them according to the package directions. After soaking, drain and rinse the beans, discarding the soaking liquid.
  2. Place the beans in a large saucepan. Add bay leaves and enough water to cover the beans by 2 inches. Bring to a boil, then reduce heat and simmer, covered, until the beans are tender, about 1 hour and 15 minutes to 1 hour and 30 minutes. Drain the beans and discard the bay leaves.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook, stirring, until tender, about 3-4 minutes. Add the sliced garlic and cook for an additional minute.
  4. To the skillet, add the chopped parsley, lemon juice, chopped oregano, grated lemon zest, salt, and pepper. Stir in the drained beans and the remaining 2 tablespoons of olive oil. Toss everything together to combine.
  5. Serve the lima beans sprinkled with additional chopped fresh parsley.
