1 pound dried lima beans |
2 count bay leaves |
3 tablespoons extra virgin olive oil |
1 count medium onion, chopped |
4 count garlic cloves, thinly sliced |
0.25 cup fresh parsley, chopped |

1 tablespoon fresh oregano, chopped |
2 teaspoons grated lemon zest |

Directions
- Rinse and sort the lima beans. Soak them according to the package directions. After soaking, drain and rinse the beans, discarding the soaking liquid.
- Place the beans in a large saucepan. Add bay leaves and enough water to cover the beans by 2 inches. Bring to a boil, then reduce heat and simmer, covered, until the beans are tender, about 1 hour and 15 minutes to 1 hour and 30 minutes. Drain the beans and discard the bay leaves.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook, stirring, until tender, about 3-4 minutes. Add the sliced garlic and cook for an additional minute.
- To the skillet, add the chopped parsley, lemon juice, chopped oregano, grated lemon zest, salt, and pepper. Stir in the drained beans and the remaining 2 tablespoons of olive oil. Toss everything together to combine.
- Serve the lima beans sprinkled with additional chopped fresh parsley.
