4  tbsp Butter Substitute
7  large Scallions, sliced thin and trimmed
4  large Garlic Cloves, Minced
16  oz Baby Spinach, Lightly Chopped
16  oz Whole Wheat Orzo
4  tsp Lemon Juice
5  oz Crumbled Feta
1  cup Frozed Peas, thawed
2  cups Chopped Fresh Dill (Parsley or Cilantro as a substitute)

Directions

  1. Heat a pot of water for the orzo. Salt the water and cook orzo to instructions. Reserve 1-1.5 cups of liquid for the sauce (we want the starch)
  2. In another large pan, add the water and reduce a bit. Slowly add leafy greens to reduce size and make room in the pot. Add the rest of the ingredients.
