  • 4 tbsp Butter Substitute

  • 7 large Scallions , sliced thin and trimmed

  • 4 large Garlic Cloves , Minced

  • 16 oz Baby Spinach , Lightly Chopped

  • 16 oz Whole Wheat Orzo

  • 4 tsp Lemon Juice

  • 5 oz Crumbled Feta

  • 1 cup Frozed Peas , thawed

  • 2 cups Chopped Fresh Dill (Parsley or Cilantro as a substitute)

Directions

  1. Heat a pot of water for the orzo. Salt the water and cook orzo to instructions. Reserve 1-1.5 cups of liquid for the sauce (we want the starch)
  2. In another large pan, add the water and reduce a bit. Slowly add leafy greens to reduce size and make room in the pot. Add the rest of the ingredients.
  3. Serve and use more cheese and scalions as garnish
